Origin & Quality – Mallorca in its purest form

Our excellent olive oil comes from certified organic olives that are processed at our Finca Son Pati de Llevant estate near Santanyi. The unique microclimate and the mix of Arbequina, Picual, and Empeltre olives create an exceptional quality. Early, gentle hand harvesting guarantees maximum freshness and top values with a polyphenol concentration of up to 900 mg/kg—a value that commercially available oils rarely achieve. The olives, still green, are harvested by hand and processed within two hours. This takes place in our own high-tech oil mill, which was specially designed for our early harvest. Low yield, maximum enjoyment for you.

Gentle processing – maximum freshness

The olives are processed using the Safeguard process developed by us. This ensures that the health-promoting ingredients are preserved and that our olive oil has an excellent shelf life. Under the highest hygiene standards, the individual olive varieties are pressed separately, tasted, and then blended together like fine wine. The oil is then stored in stainless steel tanks under inert gas and vacuum-sealed in special violet glass bottles. This ensures that the high quality is optimally protected and the aromas are preserved.
